BROCCOLI PUFF 
2 (10 oz.) pkg. frozen chopped broccoli
1 c. buttermilk biscuit mix
1 c. milk
2 eggs
1/2 tsp. salt
1 tbsp. minced onion
1 c. shredded Cheddar cheese

Heat oven to 325 degrees. Cook broccoli by package directions and drain. Set aside to cool.

Mix biscuit mix, milk, eggs, salt and onion. Stir until smooth and fold in broccoli and cheese. Pour into greased 1 1/2 quart baking dish. Bake 1 hour or until knife inserted near center comes out clean. Serves 6.
