SPEEDY YEAST ROLLS 
4 1/2 c. all purpose flour, divided
3 tbsp. sugar
1/2 tsp. baking soda
1 tsp. salt
2 pkgs. dry yeast
1 1/4 c. buttermilk
1/2 c. water
1/2 c. butter
Melted butter

Combine 1 1/2 cups flour, sugar, baking soda, salt and yeast in a large mixing bowl; set aside.

Combine buttermilk, water and 1/2 cup butter in a small saucepan; heat to 120 to 130 degrees. Stir well and add to flour mixture. Beat at medium speed of electric mixer 4 minutes. Gradually add remaining flour, mixing well.

Turn dough out on a floured surface and knead until smooth and elastic, about 5 to 8 minutes. Place in a greased bowl, turning to grease top. Cover and let rise in a warm place, 85 degrees, free from drafts, about 30 minutes or until doubled.

Punch dough down, and shape into 1 1/2" balls. Place on greased cookie sheets; cover and let rise in a warm place, 85 degrees, free from drafts, about 30 minutes or until doubled in bulk. Bake at 400 degrees for 15 to 20 minutes. Brush with melted butter. Yield: about 2 dozen rolls.
