POTATO CHEESE PUFF 
3 c. mashed potatoes
2 c. shredded cheddar cheese
Salt to taste
1 c. hot milk
2 eggs, separated
Cayenne pepper to taste

Cook and mash potatoes to make 3 cups. Grate cheese and melt it in the hot milk. Use double boiler. When it is smooth and creamy, beat it into mashed potatoes, to which salt, pepper and egg yolks have been added. Taste for seasoning. Fold in the stiffly beaten egg whites. Pour mixture into a well buttered baking dish.

Bake at 350 degrees for 20 to 25 minutes or until puffed and golden.
