CHEESE POTATO PUFF 
12 med. potatoes
6 tbsp. butter
2 1/4 c. Cheddar cheese, grated
2 eggs, beaten
1 1/4 c. milk
3/4 tsp. salt

Peel potatoes and cook until tender. Drain and mash thoroughly. Add butter, cheese, salt, milk and beat over very low heat until butters and cheese are melted. Fold in eggs and pour into greased 13 x 9 x 2 inch baking dish. Bake at 350 degrees for 1 hour or until puffy and golden brown.

NOTE: If you don't intend to bake this right away - refrigerate.
