SPICE PUFFS 
Oil for frying
2 1/4 c. flour
1/3 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. mace or nutmeg
1/2 tsp. cinnamon
3/4 c. milk
1/4 c. vegetable oil
1 egg
1 c. sugar, optional
1 tsp. cinnamon, optional

Pour oil in heavy pan or deep skillet to depth of 3 inches. Heat to 375 degrees. In a bowl, combine flour, sugar, baking powder, salt and spices.

In a large bowl, combine milk, oil and egg. Beat lightly with fork until blended; pour into dry ingredients. Stir until well blended. Drop dough by teaspoonfuls into hot oil; don't crowd pan. Little puffs will usually turn over by themselves. If not, you have to turn them until brown. Don't make puffs too big or they will not cook in the center. Scoop puffs from oil with slotted spoon. Drain on paper towels. Serve plain or while warm, toss in 1 cup sugar mixed with 1 teaspoon cinnamon.
