STUFFED PUFFS | |
PUFFS: 1 c. water 1/2 c. butter 1 c. flour 4 eggs Heat oven to 400 degrees. Heat water and butter to rolling boil in 2 1/2 quart saucepan. Stir in flour vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Beat in eggs all at once. Continue beating until smooth. Drop dough by scant 1/4 cupfuls about 3 inches apart onto greased cookie sheet. Bake until puffed and golden, about 30 minutes. Cool away from drafts. Cut off tops, pull out any filaments of soft dough, fill puffs with filling. FILLING: 1 pkg. taco seasoning mix 1 clove garlic or garlic powder Frozen mixed vegetables Raisins 1 c. soy burger, added to water or ground meat, cooked 2 c. instant rice, cooked Add taco seasoning and 1 1/2 cup water. Stir and add garlic. Simmer 10 minutes and add frozen vegetables. Cook until vegetables are tender. Add remaining ingredients, except rice; mix well. Last, add rice and mix; fill puffs. |
