POTATOES AND BACON 
8 cooked, peeled, and diced potatoes
1 lb. American cheese, cut in strips
1 c. mayonnaise
1/2 c. chopped onion
Salt and pepper to taste
1/2 lb. partially cooked bacon

Place diced potatoes in 9 x 13 inch pan. Add the rest of ingredients, except bacon. Mix together. Top with bacon. Bake, uncovered, at 325 degrees for 1 hour.
