SOUTHERN CORN BREAD 
1 1/2 c. white cornmeal
3 tbsp. flour
3 tsp. salt
1 tsp. baking soda
1 egg
2 tbsp. drippings, butter

Stir dry ingredients into a mixing bowl. Add the buttermilk and egg and stir until the mixture is blended. Melt drippings or butter in a skillet or baking pan and pour into the batter. Blend, then pour batter into hot 8 inch baking pan and bake in a 475 degree oven about 20 minutes or until done. Yield: 9 servings.

Variations: For cornsticks, pour batter into greased, heated cornstick pans and bake in a 475 degree oven about 15 minutes or until done.
