PEPPER STEAK SUPREME | |
1 1/2 lb. round steak, cut in 1/4 x 2 inch trips 1 tsp. meat tenderizer 2 tsp. paprika 2 cloves garlic, crushed or 1/2 tsp. garlic powder 2-3 tbsp. oil or butter 1 med. onion, coarsely chopped 2 green bell peppers, cut in strips 2 lg. ripe tomatoes, cut in 10 wedges each 1 c. beef broth 1/2 c. water 2 tbsp. cornstarch 1 tbsp. soy sauce Sprinkle steak with tenderizer and paprika and let stand while preparing other ingredients. Cook steak in oil or butter until browned. Add onions, pepper and cook until vegetables are crispy tender. Add tomatoes and broth. Cover and simmer 8 to 10 minutes. Mix cornstarch, water and soy sauce. Add to beef and stir to thicken. Serve over rice. Serves 6. |
