SKILLET FISH | |
5 tbsp. butter or vegetable oil 1 c. chopped onion 1 1/2 c. diced potato 1 c. corn kernels 1 lb. fish fillets (cod, bass or snapper) in 1-inch chunks Salt & freshly ground pepper 1/3 c. chopped parsley Heat 4 tablespoons of the butter or oil in a large skillet over medium high heat, then add the onion and potato and cook slowly until tender. Stir in the corn kernels and the remaining tablespoon of butter. Add the fish chunks and salt and pepper to taste and continue cooking, stirring occasionally until the fish is cooked through, about 5 minutes. Be careful not to break up the fish while stirring. Sprinkle the parsley over fish and serve. |
