CHERRY CHEESECAKES 
3 (8 oz.) pkgs. cream cheese
2/3 c. sugar
1 tsp. vanilla
3 eggs
24 vanilla wafers
1 (1 lb. 5 oz.) can cherry pie filling
24 cupcake liners

Beat cream cheese and sugar for three minutes. Add vanilla and eggs and beat. Line pans with liners. Place 1 cookie, flat side down, in each liner. Fill to 1/4" from top. Bake at 350 degrees for 25 minutes. Spoon filling on each when cool. Do not overbake. Makes 24. Very good and quick to prepare. Tom's favorite.
