COCONUT PEANUT BUTTER COOKIES 
1/2 c. butter
1/2 c. Spry or other solid shortening
1 c. brown sugar
1 c. white sugar
1/2 c. crunchy peanut butter
2 eggs
1 tsp. vanilla
3 c. oatmeal
1 (7 oz.) pkg. Angel Flake coconut
1 1/4 c. flour
1 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt

Cream butter, shortening, peanut butter, and sugars well. Add eggs, one at a time, beating well. Add vanilla. Sift all dry ingredients together and add slowly.

By hand, stir in coconut and oatmeal. Drop by tablespoon on cookie sheets and bake for 10 minutes at 400 degrees. Cool 1 minute before removing from pan. Makes 12 dozen.
