BEANS OF ANY KIND 
1 onion
1/2 sweet pepper
5 toes of garlic
1 lb. dry beans (red beans, white beans, black eyes, Northern, black, etc.
Salt to taste
Pepper to taste
1 lb. ham or sausage

Sort beans and soak beans overnight in pot of water; just enough to cover. Rise beans. Dice seasoning. Put beans in pot with seasoning. Cover with water. Bring to a rolling boil. Reduce heat and simmer for at least 3 hours. Beans should become very creamy. Serve over hot fluffy rice.
