CHICKEN SOPA 
1 onion, diced and sauteed in 3 tsp. oil
1 can cream of chicken soup
1 can cream of mushroom soup
1 sm. can chopped chilies
Black olives (optional)
1 c. chicken broth (Swansons, for example)
1 chicken, boned and shredded or skinless breast, etc.
1 pkg. (sm. size bag) tostada chips or tortilla chips
1 lb. Cheddar cheese, shredded
1 c. tomatoes

Mix all ingredients except tostado chips and cheese over low heat in large pot. Layer tostado chips, chicken mixture and cheese alternately. Bake at 350 degrees until all cheese melts and mixture is hot.
