Preheat oven to 300-325 degrees. Use tube pan. 1 c. sweet butter 2 1/4 c. sugar 5 eggs 3 c. flour 2/3 c. EACH of yellow raisins, currants, mixed candied fruit 2 cans (the size of baking powder cans) - almond paste With all ingredients at room temperature, cream butter, add sugar, and eggs - one at a time - beating constantly. Add flour gradually. Fold in the raisins, currants and candied fruit. Roll out the cans of almond paste separately. I make a wreath of the stuff, and then just flatten it out with the rolling pin - ca 3/16 inch thick - actually, to the size of the tube pan - so it will fit. Pour 1/3 of the dough in the tube pan, put a layer of almond paste on it, add another 1/3 of dough, the second layer of almond paste, and the last 1/3 of the dough. (MAKE THE FIRST LAYER OF DOUGH THE LEAST. Bake 2 hours at 300 degrees. LET COOL COMPLETELY BEFORE REMOVING FROM PAN. |
