HIGHLAND CAKE 
1 c. raw oatmeal
1 stick butter
1 1/4 c. boiling water
2 eggs
1 c. brown sugar
1 c. white sugar
1 3/4 c. flour
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda

Combine first 3 ingredients. Let stand for 20 minutes. Beat well the eggs, brown sugar and white sugar. Add flour, salt, cinnamon and soda. After 20 minutes, mix (by hand) all ingredients together. Pour into a 13 x 9 pan. Sprinkle with Crumb Topping.

Bake at 350°F for 40 to 45 minutes.

Crumb Topping:

3 tbsp. soft butter
3/4 c. brown sugar
1/2 c. coconut
1/2 c. pecans
