3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
1 1/3 c. oil
8 oz. can crushed pineapple with juice
1 1/2 tsp. vanilla
3 eggs
2 c. diced ripe bananas

Measure dry ingredients into large mixing bowl. Add diced banana, oil, vanilla, eggs and crushed pineapple with juice. Stir until well blended but do not beat (Mix by hand.) Bake in greased tube pan at 350 for 1 hour and 20 minutes. Cool before removing from pan. Sprinkle with powdered sugar or an icing of choice. A good way to use ripe bananas. Different, but good.
