GOLDEN RAISIN BUNS (CREAM PUFFS) 
1 c. water
1/2 c. butter
1 tsp. sugar
1/4 tsp. salt
1 c. flour
4 eggs
1/2 c. golden raisins (or reg.)

(Cover raisins with hot water and let stand 5 minutes - drain well).

Combine water, butter, sugar and salt in saucepan. Add flour all at once, then, over low heat, beat with wooden spoon (this is critical to how they will turn out) about one minute OR until mixture leaves sides of pan and forms a smooth thick dough. Remove from heat and continue beating 2 minutes to cool slightly.

Add eggs, one at a time, beating after each until has satiny sheen. Stir in raisins. Drop heaping tablespoons 2 inches apart on greased sheet. Bake at 375 degrees for 30-35 minutes OR until doubled, gold and firm.

Cool on wire rack while warm. Cover with lemon frosting. Makes 20.

LEMON FROSTING:

Melt:

1 tbsp. butter

Add:

1 1/2 tbsp. milk

Remove from heat.

Stir in:

1 c. powdered sugar until smooth

Add:

1/2 tsp. lemon juice
1/2 tsp. vanilla

1 1/2 minutes to 1 minute and 20 seconds. My microwave is 1 minute and 15 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
