BUTTERMILK PIE 
1 1/4 c. sugar
2 tbsp. self-rising cornmeal
3 eggs, beaten
1/2 c. butter, melted
1/3 c. buttermilk
1 tsp. vanilla extract
1 (9-inch) pie shell (unbaked)

Combine sugar and cornmeal. Add eggs, butter, buttermilk and vanilla. Mix well. Pour into unbaked pie shell.

Bake for 40 to 45 minutes at 350°F.
