GREEK VILLAGE BEAN SOUP 
1 c. diced beans, brown eyed
2 qt. cold water
4 stalks celery, chopped
2 onions, chopped
2 carrots, chopped
1 bay leaf
1/4 c. olive oil or 1 tbsp. butter
2 tsp. salt & pepper (to taste)
Small can tomatoes

Bring beans to a boil. Reduce heat and simmer 1 hour. Add remaining ingredients. Simmer 1 1/2 hours until beans are tender.
