SNOW SOUP 
1 lb. ground beef
2 lg. carrots
2 lg. ribs celery
1 lg. onion
2 (1 lb.) cans tomatoes (chopped)
1 c. barley
2 bouillon cubes
Fresh ground pepper
2 tbsp. parsley
6 c. water

Brown 1 pound ground beef or ground turkey in 5 quart Dutch oven or large soup pot. Skim all fat. Slice and add 2 carrots, 2 ribs celery and 1 large onion. Add tomatoes, barley, bouillon cubes and pepper, 2 tablespoons parsley and 6 cups water. Simmer 1 hour until barley is fully cooked. Serve with hot bread or rolls.
