SCALLOPED CHICKEN 
2 qt. (1/2 inch) bread cubes (from fresh bread)
3/4 c. butter, melted
1 tsp. salt
1 sm. onion, grated

SAUCE:

1/4 c. flour
4 c. chicken broth
1 tsp. powdered sage
1/4 tsp. pepper
6 whole cooked chicken breasts (or 1 qt. cooked chicken)
1/4 c. butter, melted or chicken fat

Place bread cubes in bowl, mix together melted butter, sage, salt, pepper and onion. Mix lightly but thoroughly through bread cubes. Skin and bone cooked chicken breasts,; break into large pieces; put in 9 x 13 inch pan. Top with bread cube mixture.

For Sauce: Melt butter or chicken fat, add flour. Add chicken broth. Cook, stirring until thickens a little. Pour sauce over chicken and bread cube mixture. Bake in 350 degree oven for 45 minutes, (should be brown and crispy on top). Serves 12.
