SPICED NUTS 
1 lb. nuts (I used pecans)
1 c. sugar
1/2 c. water
3/4 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon

Toast and bake nuts at 375 for 5 to 10 minutes, stirring occasionally. Watch carefully usually take about 8 minutes. Cool.

Combine ingredients, except nuts. Simmer to 230°F or until syrup spins a small thread (about 4 minutes). Do not over cook. Remove from heat and add toasted nuts quickly. Stir until crystallized.

Turn out onto buttered plate or pan and gently separate nuts.

It will take two hours or more to harden and become dry for serving.
