FRESH PLUM DESSERT CAKE 
2 c. fresh tart plum halves
1/4 c. sugar
1/2 c. (1 cube) butter
1/2 tsp. lemon extract or 2 tsp. fresh lemon juice
1 c. sugar
2 eggs
1 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. fresh salt
1/2 tsp. cinnamon
2 tbsp. sugar mixed with 1 tsp. cinnamon

Arrange the halved and pitted fresh plums in the bottom of a greased baking pan (7x11 inches or 9 inch square). Sprinkle with 1/4 cup sugar.

In a bowl, cream together thoroughly the butter, lemon extract or juice and 1 cup sugar. Add eggs, one at a time, beating well after each is added. Sift flour, measure and sift into the bowl with baking powder, salt and 1/2 teaspoon cinnamon. Stir until well blended. Spoon batter over the plums. Sprinkle the top with sugar and cinnamon mixture.

Bake in a moderately hot 375 degree oven about 45 minutes or until the cake pulls away from sides of pan. Serve warm or cool, topped with sour cream or whipped cream, if you wish. Makes 6 to 9 servings. Rich and spicy.
