SOUTHERN FRIED CHICKEN 
4 slices toast
1 tsp. parsley flakes
1/2 tsp. poultry seasoning
4 (8 oz.) skinned chicken breasts or whole chicken
1 tsp. salt
1/2 tsp. pepper
1/2 c. skim milk

Roll toast into crumbs with rolling pin. Mix in parsley flakes and poultry seasoning. Sprinkle chicken with salt and pepper. Pour skim milk into small bowl. Completely immerse each piece of chicken in milk, then roll in crumb mixture. Making sure chicken is completely coated on all sides. Place chicken in non-stick baking pan. Distribute any remaining milk or any remaining crumbs evenly over all pieces. Bake at 450 degrees for 1 hour, until it was good and brown. Makes 4 servings.
