SOUTHERN FRIED CRISPY CHICKEN 
Whole frying chicken or favorite parts
2 c. flour
1 c. milk
2 eggs
1 1/2 c. shortening, approx.
Salt (opt.)

Cut up chicken and rinse. In large bowl combine eggs and milk. Preheat shortening in large skillet on medium heat. Dip chicken in milk and egg mix, salt lightly (optional), roll in flour. Put in skillet only if shortening is hot, don't turn up the heat. After chicken is brown on one side, about 15 minutes, turn to other side. Don't turn chicken back and forth, you'll lose your batter. This works with pork chops or fish.
