SOUTH OF THE BORDER CASSEROLE | |
3 tbsp. salad oil 8 (6 inch) corn tortillas 1/2 lb. ground beef 1 med. onion, diced 1 sm. cloves garlic, minced 2 (15 1/2 oz.) cans pinto beans 1 (28 oz.) can tomatoes 1 (6 oz.) can tomato paste 1 (4 oz.) can green chilies, diced 2 tsp. sugar 1 tsp. salt 1/2 tsp. oregano 1/4 tsp. black pepper 1 c. coarsely shredded sharp cheese Fry tortillas until soft. Cut in strips. Brown beef, onions, and garlic. Stir in beans tomatoes, and rest of ingredients except cheese. Layer tortillas and beef mixture. Sprinkle cheese on top. Bake at 350 degrees for 30 minutes in a 13 x 9 inch baking dish. |
