TACOLADA CASSEROLE | |
1 onion, chopped 1 tbsp. olive oil 2 cans Italian stewed tomatoes 2/3 pkg. McCormick taco seasoning (mild) 1 can pinto beans 9 corn tortillas 4 slices Kraft no fat cheese Heat oven to 350 degrees. Saute onion in oil until soft. Add tomatoes, beans and taco seasoning. Line 8 x 8 inch pan with layer of torn up tortillas (about 3). Put 1/3 of bean mixture on. Add layer of tortillas, 1/3 bean mixture and 4 slices cheese. Add final layer of tortillas and rest of beans. Cover with foil and bake at 350 degrees for approximately 30 minutes. Serves 4 big portions or 6 medium portions. |
