DEBBY'S RICOTTA CAKE 
1 box yellow cake mix
3/4 c. sugar
1 tsp. vanilla
1-2 lbs. ricotta cheese
4 eggs

FROSTING:

1 lg. can crushed pineapple, drained
2 (8 oz.) cartons Cool Whip
1 box instant pistachio pudding mix

Mix cake according to directions. Pour into greased pan, 13"x9"x2". Mix cheese, sugar, eggs and vanilla, pour over cake mix. Bake at 350 degrees for 1 hour and 5 minutes. Frost when cool. FROSTING: Mix ingredients together and frost.
