OATMEAL RAISIN NUT COOKIES 
1 c. rolled oats
1 1/2 c. whole-wheat pastry flour
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 c. walnuts, chopped
1/2 c. raisins, soaked in hot water to cover 5 minutes
1/2 c. vegetable oil
1/2 c. maple syrup
1 tsp. vanilla
2 tsp. rice vinegar

Drain raisins. Blend dry ingredients. Stir in remaining ingredients. Drop on greased cookie sheet and bake 15 to 20 minutes at 325°F.

Yields 24 small cookies.
