MOCHA PARFAIT 
1/2 c. sugar
1/2 c. water
1 1/2 tsp. instant coffee
1 c. (6 oz.) semi-sweet chocolate chips
2 eggs
1 1/2 c. heavy cream

Combine sugar, water and coffee in saucepan and bring to a boil, cover on high heat for 3 minutes (no longer).

Place chips in blender and add sugar. Blend for 6 seconds. Add eggs and blend for 1 minute. Remove and fold mix into whipped cream. Pour into parfait dishes and put into freezer.
