SALMON PATTIES 
1 lg. can salmon, flaked
1 tbsp. mustard
Soda cracker crumbs
Corn oil
Lemon wedges
1/4 tsp. pepper
2 eggs, beaten
1/2 c. milk
1 tbsp. flour

Mix salmon, pepper and mustard together. Mix eggs, milk, and flour in heavy pan and cook slowly, stirring constantly until quite thick. Add salmon mixture and cracker crumbs (about 4 crackers). Let cool. Make into patties, roll in cracker crumbs. Heat corn oil in skillet. Fry patties brown on each side. Serve with lemon wedges.
