ROUND STEAK ITALIENNE 
1 (2 lb.) round steak
1/4 c. flour
1 1/2 tsp. salt
1/8 tsp. pepper
3 tbsp. oil
1 (16 oz.) can tomatoes
1 clove garlic
1/2 tsp. oregano
1/8 tsp. dry mustard
1 c. sliced celery
1 med. onion, sliced
1/2 tsp. chopped parsley

Cut steak into serving pieces. Mix flour, salt and pepper. Dredge meat with seasoned flour and brown in oil. Pour off drippings. Add tomatoes, garlic, oregano and mustard. Cover tightly, simmering 1 1/2 hours.

Add celery and onion, and continue cooking for 20-30 minutes longer or until done. Sprinkle with parsley. Makes 5 or 6 servings.
