VEGETABLE CASSEROLE 
Finely chopped onion, celery, bell pepper (1 c. total)
1 can French cut green beans
1 can shoepeg corn
1 can cream of celery soup
1 c. grated sharp Cheddar cheese
1/2 c. sour cream
Crushed cheese crackers (sufficient to cover top of casserole dish)

Saute onion, celery, and bell pepper until soft. Combine with all other ingredients except crushed crackers. Mix well. Place in large casserole dish. Top with crackers and bake until mixture is bubbly and crackers are slightly brown, at 350 degrees for approximately 20 minutes. Serves 8-10.

Slivered almonds are a nice addition, if desired.
