RHUBARB DESSERT | |
CRUST: 1/2 c. butter 1 c. flour 5 tbsp. powdered sugar FILLING: 2 eggs 1 1/2 c. sugar 3 tbsp. flour 1/2 tsp. baking powder 1/2 tsp. salt 1 tsp. vanilla 1/4 tsp. nutmeg 3 c. diced rhubarb Mix crust ingredients and put into 7x9 inch pan. Bake at 350 degrees for 10 minutes or until lightly golden. Beat eggs, add sugar, then remaining ingredients. Mix well and fold in rhubarb. Spoon over crust and bake 45 minutes at 350 degrees. For a crowd, double crust ingredients and triple filling. Bake in 11x16 inch pan at 350 degrees for 1 hour and at 300 degrees for 45 minutes more. |
