SWEET POTATO CASSEROLE 
3-4 lg. sweet potatoes
1 c. granulated sugar
1 stick butter
1 c. crushed pineapple, drained
2 lg. bananas, mashed
1/2 c. coconut
1/2 c. pecans, chopped
2 tsp. vanilla

Mix 2 teaspoons salt into 1 quart hot water. Peel, rinse and slice potatoes into water. Cook until tender; drain. Add butter and mix well. Mash bananas; stir in pineapple and potatoes. Add coconut, nuts and vanilla. Pour into greased casserole and bake at 350 degrees. Dot with marshmallows and bake until brown.
