SICILIAN MEDLEY 
1 lb. sweet Italian link sausage, cut in 1/2 inch slices
4 lg. tomatoes, peeled, quartered and sliced
1 lg. green pepper, cut in strips
2 tbsp. minced parsley
3/4 c. grated Parmesan cheese
1 tbsp. tomato paste
8 oz. ziti macaroni, cooked and drained
1/2 c. sliced pimento, stuffed green olives
1/2 c. sliced black olives
1/2 c. shredded Mozzarella cheese

Preheat oven to 350 degrees. In large skillet over medium heat, saute sausage for 10 to 12 minutes or until browned; drain well to remove excess fat. Increase heat to medium-high. Add tomatoes, green pepper, parsley and tomato paste. Cook and stir for 8 to 10 minutes or until green pepper is crisp-tender and juices are thickened; remove from heat. Stir in ziti and olives. Spoon half of the mixture into a 2 1/2 quart baking dish. Sprinkle with half of the Parmesan cheese; repeat. Top with shredded Mozzarella cheese. Cover and bake for 30 minutes or until very hot.
