3 c. white sugar 1/2 c. white syrup (Karo) 1/2 c. water 2 egg whites 1/2 tsp. vanilla 1/2 c. chopped walnuts Beat the egg whites real stiff in a large bowl. At the same time, boil sugar, syrup and water to the "soft ball" stage in cold water. (Use a cup of water almost ice cold for testing. It is at the "soft ball" stage when the candy will hold its shape when formed into a ball and begins to stiffen slightly). While beating, pour half of the syrup over the beaten egg whites and return the pot to boil until candy will crack when tested in cold water. Add to first mixture while beating. Add vanilla. When candy turns a little dull, add nuts and pour on lightly buttered pan or dish. Cut when firm. |
