RECIPE COLLECTION
“16 BEAN SOUP” IS IN:

16 BEAN SOUP
1 pkg. 16 dry Bean Soup
2 bay leaves
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
3 stalks celery, stringed and sliced thinly
1/2 lb. baby carrots
1 onion, chopped
4 cloves garlic, minced
1 lb. Italian sausage
1 tablespoon olive oil
2 cans chicken stock
1 can diced or stewed tomatoes
1/4 teaspoon crushed red pepper
salt and pepper, to taste
1 chicken bouillon cube
water to cover ingredients

Slice casings of sausage meat and crumble into a skillet. Add olive oil and sauté over medium high heat until outside of sausage begins to brown. Add onion and saute until translucent. Add garlic near end. Sausage meat does not need to cook, only brown slightly. Do not allow garlic to brown.

Deglaze pan with chicken stock, and transfer contents of pan to Crock-Pot.

Add remaining ingredients except for tomatoes to Crock-Pot.

Set Crock-Pot to high setting and cook for 2 hours, then cook an additional 3-5 hours on low setting or until beans are tender. Note: Do not allow to boil - choose a setting low enough to keep at a simmer only!

Check occasionally to see if more liquid is required as beans expand during cooking. Add tomatoes during final hour of cooking.

Season with salt and pepper to taste.

Can be served over pasta or rice.

Note: When in season, fresh herbs may be substituted for dried for enhanced flavor.

Delicious recipe! But one thing... there is a lot more than 16 beans in that bag.

So easy and delicious! I added a one pound package of Italian sausage. I just squeezed the sausage out of the casing and added it. Didn't sautee. My husband loves homemade soup. This is a big treat! It's fun because it cooks on simmer on the stove all day! Great smells and great soup! Serving it with Cheddar Bay Biscuits. Our favorite.

Doubled the recipe so there would be enough to freeze. I used fresh herbs. This is a new family favorite. Even a picky teenager liked it. I dare say it was even better the next day.

WOW! I had a dry bag of 16 beans in the closet and had no idea what to do with it. I stumbled across this recipe and figured I'd give it a try. AMAZING! I didn't have any celery on hand, but I had everything else. It still came out perfect. My husband, who WILL NOT EAT BEANS, ate this over white rice, and enjoyed it. He even said he would eat it again! You will not be disappointed with this recipe.

I loved this soup! Although instead of the pkg of bean soup i used beans that I get from WIC which is pretty much every kind of bean about 3/4 cups each and it turned out WONDERFUL! Thank you so much for the recipe! I am making it for the second time and even my very picky grandma loved it!

I made this but changed up a few things and everyone loved it so much I keep making it with the changes. I use ham base (Minors) instead of the chicken bouillon. I replaced the Italian sausage with diced up ham. The tomato's I got the ones with the green chiles in it. Delish

I give it 5 stars because I have ALL the ingredients on hand...except I put 8 thin sliced sandwich steaks...bought on sale! I seared the steaks and than cut them in strips and then cut the strips into 3 squares. than I sauteed the onion and garlic and used beef cubes instead of chicken! Can't wait to taste it..."SURE SOUNDS YUMMY~n~FILLING!!!"
