FRAN'S PORK CHOPS 
6 pork chops
1 1/2 c. cooked rice
1 sm. onion, diced finely
1/2 c. chopped green pepper
1/2 tsp. black pepper
1/2 tsp. paprika
1/2 tsp. rosemary
1/2 tsp. oregano
1 tsp. salt
1/2 tsp. Italian seasoning
1 tsp. parsley
1/2 tsp. basil
4 oz. chopped tomatoes

Brown pork chops in a skillet (do not use any oil or fat) until browned on each side. Set aside on a platter. In the same skillet add all the rest of the ingredients except cooked rice and tomatoes. When onions and peppers are browned and all seasonings blended in, add tomatoes and simmer for about 10 minutes. If too dry add a bit of water.

To this mixture add rice and blend well. Set pork chops on rice, cover and simmer for about 10 more minutes.
