1 med. chicken
Salt & pepper to taste
1 stick butter
2 prigs parsley
2 cloves garlic
Juice of 1 lemon
1 stick butter

Generously salt and pepper chicken inside and out. In cavity of chicken put 1/2 butter, parsley and 1 garlic clove and seal the opening with foil.

In a saucepan, melt 1 stick of butter, 1 crushed garlic clove and lemon juice. Place the chicken in oven at 300 degrees. Baste constantly with sauce and turn frequently until chicken is brown and tender, about 1 hour.
