COFFEE CAKE 
1 c. sugar
1 c. cooking oil
4 beaten eggs
1 tsp. baking powder
2 c. flour
1/2 tsp. salt
1 can apricot pie filling
1/4 c. sugar
1 tsp. cinnamon

Mix oil, eggs, baking powder, flour, and salt. Spread 1/2 of mixture in greased 9 x 13 inch pan. Spread pie filling over top and add other half of dough. Spread with sugar and cinnamon. Bake at 350 degrees for 30 minutes.
