PINEAPPLE DROP COOKIES 
1/2 c. shortening
1/2 c. brown sugar
1 c. white sugar
1/2 c. drained crushed pineapple
1 egg, beaten
2 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1 tsp. vanilla
1/2 c. walnuts, chopped

Set oven to 425°F. Cream shortening and the brown and white sugars. Add pineapple and egg to the cream mixture. Add the dry ingredients: flour, baking powder, salt and baking soda to mixture. Add vanilla and walnuts to mixture. Drop by level teaspoon on greased or sprayed cookie sheet.

Bake 8 to 10 minutes or until light brown.

Moist cookies will soften up hard cookies if put in container with them.

Oh my gosh, I've searched and searched for this particular recipe for decades. This, too, was once a favorite for Christmas cookie trays. I'd add a red or green candied cherry on top to make it look festive. Very moist and delicious. I originally found this in either Betty Crocker cook book from the mid 60's or Good Housekeeping from mid 60's. I have since lost them.. so happy to find so many of these I once made for my family and loved!
