3 c. sugar 1/2 c. light corn syrup 1/2 c. cold water 2 egg whites 1 tsp. vanilla Put sugar, syrup and water in heavy pan on low heat. Stir until sugar is dissolved. Then cook until forms soft ball. Beat egg whites until stiff. Continue beating. Pour half the syrup over egg whites. Cook rest of syrup until spins a thread or cracks against cup. Add rest of syrup. Continue beating. Add vanilla. Continue beating until candy is thick enough to drop from a spoon. Put spoonful on wax paper. Nutmeats may be added just before you drop. I use walnuts. |
