MICROWAVE PEANUT BRITTLE 
1/2 c. unsalted dry roasted peanuts
1 c. granulated sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

In glass mixing bowl combine peanuts, sugar, corn syrup and salt. Cook on high (100% power) 7-9 minutes, until mixture is bubbling and peanuts are brown. Quickly stir in butter and vanilla. Cook on high (100% power) 2-3 minutes longer. Add baking soda. Stir quickly just until mixture is foamy.

Pour immediately onto greased baking sheet. Let cool about 15 minutes until firm; break peanut brittle into pieces. Store in airtight container. Makes about 1 1/4 pounds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
