MICROWAVE PEANUT BRITTLE 
2 c. sugar
1 c. water
1/4 tsp. salt
1 tsp. vanilla
1 c. light corn syrup
2 c. unroasted peanuts
1 tsp. butter
1 tsp. baking soda

Combine sugar, syrup and water in 2-quart bowl. Microwave 18-20 minutes on HIGH or until a small amount dropped in very cold water forms a soft ball (240 degrees).

Stir in peanuts and salt. Microwave 10-13 minutes on high or until a small amount dropped in very cold water separates into hard brittle threads. Immediately stir in butter, vanilla and soda. Mix well. Spread evenly and thinly on large buttered cookie sheet. Cool; break into pieces when cold. Eat and enjoy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
