VEAL PARMESAN 
2 tbsp. butter
1/3 c. evaporated milk
2 tbsp. grated Parmesan cheese
1/4 c. flour
1/2 tsp. salt
1/3 c. evaporated milk
1/2 c. grated Parmesan cheese
8 oz. can tomato sauce
Veal

Melt butter in 12x8 inch pan in 350 degree oven. Dip veal in 1/3 cup evaporated milk. Combine 2 tablespoons Parmesan cheese, flour and salt; roll dipped veal in this mixture. Place veal in melted butter in pan; bake, uncovered, at 350 degrees for 30 minutes. Meanwhile, combine 1/3 cup evaporated milk and 1/2 cup Parmesan cheese. Pour tomato sauce around partially cooked veal and spoon cheese mixture over top. Bake 20 to 25 minutes more.
