CHICKEN JOSEPH MONROE 
6 chicken breast halves, boned and skinned
3/4 c. cream cheese
1/3 c. blue cheese
5 tbsp. butter, room temp.
1/4 tsp. grated nutmeg
3/4 c. grated Swiss cheese
3 tsp. Dijon mustard
1 egg
1/3 c. flour
1/2 c. bread crumbs

Cream together the cream cheese, blue cheese, butter and nutmeg. Form the cheese mixture into 6 ovals. Roll each oval in grated Swiss cheese. Chill on a plate for at least 1 hour.

Flatten each chicken breast and spread with 1/2 teaspoon of the Dijon mustard. Place a chilled cheese oval on each breast and roll up. Flour each rolled breast, dip in beaten egg and then in bread crumbs. Chill for an hour.

Sear the chicken breasts in clarified butter over high heat for 2-3 minutes. Put pan in oven 400 degrees and bake for 7-10 minutes.
