GRANDMOTHER JOSEPH'S BARBEQUE | |
Per pound of meat, use: (Larger amounts are made by doubling quantities and increasing meat poundage). 4 tbsp. (1/2 stick) butter 1 lg. onion, sliced 1/2 c. brown sugar, dark 1/4 tsp. dry mustard 1 tbsp. Worcestershire sauce 1/4 c. water 1/4 c. apple cider vinegar 1 c. catsup 1 lb. meat Pork roast, chicken, turkey, shredded hamburger, or roasted beef are all suitable. Melt butter in large skillet. Add sliced onion and saute until onion is transparent but not browning (medium to medium high heat). Add brown sugar and dry mustard and stir until smooth (no lumps). Then add Worcestershire sauce, vinegar, catsup and water and stir. Bring mixture to a light boil and reduce heat. Simmer on low heat for 20 minutes, stirring occasionally. After simmering, add meat (shredded or crumbled) and simmer an additional 15-20 minutes. Serve over hamburger buns. Flavor is even better when made a day in advance. A crock pot is ideal for reheating. |
