WHOLE WHEAT BREAD PUDDING 
8 slices whole wheat bread
Nonstick pan spray
1 cup sweetened dried cranberries
1/4 teaspoon salt
1-1/2 teaspoons vanilla
12 packets stevia sweetener
5 eggs
1 cup lite pancake syrup
12 oz can evaporated milk
1/2 cup milk
1/2 cup brown sugar
1 tablespoon cinnamon

Cube bread (cutting crust into smaller pieces) and place in 9x13 baking pan. Place pan in 350°F oven and bake for 10 minutes. Nonstick spray a 9x9 baking pan that fits in the 9x13 pan.

In large mixing bowl place cranberries, salt, vanilla, and stevia. Add eggs and vigorously beat with fork. Stir in syrup and milks.

In small bowl combine brown sugar and cinnamon. Stir bread cubes into cranberry egg mixture until completely moistened. Turn half of bread cube mixture into prepared 9x9 pan. Sprinkle half of cinnamon mixture over. Turn rest of bread cube mixture into the 9x9 pan then sprinkle rest of cinnamon mixture over.

Set small pan in large pan. Add water to large pan to 1-1/2 inches.

Bake at 350°F for 75 minutes till puffy and crusty. Cool on rack half an hour.

Serve warm or cold.
